The wines we have on tasting today are;
Yarra Valley Chardonnay 2012
Our Chardonnay wine is made in stainless steel, with some small lots barrel fermented and aged in our cold room that we keep at 47 degrees. Very little sulfur dioxide is used during production and instead the lees and carbon dioxide from fermentation help protect the wine from oxidation.
Yarra Valley Nebbiolo 2011
Our premium range of Nebbiolo wine is made from select parcels of the very finest regional grapes. Machine harvesting during the cool of the night in order to maintain optimal fruit integrity. The grapes are pressed under cool gentle conditions
Reserve Yarra Valley Pinot Noir 2012
Hand-picked fruit from our black field vineyard, fermented with wild yeast, de-stemmed with 20% whole bunches, hand-plunged in open vats. Aged in French oak barriques for 15 months.
Yarra Valley Shiraz 2011
Our Shiraz wine is handmade in the traditional way, hand pruned vines, handpicked fruit, gently mechanically destemmed, open fermentation, hand plunged, basket pressed, matured in a range of old and new French and American oak, some are even hand bottled.
